Wzbogacanie mleka spożywczego solami wapnia i magnezu
Streszczenie: Celem wzbogacania żywności jest uzupełnianie diety w niedoborowe składniki pokarmowe. Wzbogacając mleko spożywcze solami wapniowymi i magnezowymi należy brać pod uwagę wiele czynników. Przede wszystkim stabilność białek, jeśli wzbogacanie ma odbywać się przed obróbką termiczną. Aspekty zdrowotne, sensoryczne i ekonomiczne, trzeba rozpatrzeć niezależnie od sposobu wprowadzania soli wapniowych i magnezowych do mleka.
The enrichment of milk with calcium and magnesium salts
Summary: An aim of the enrichment process of food is supplementing of the diet into deficit nutrients. Enriching milk with calcium and magnesium salts it should take into account many factors. First of all the stability of milk proteines, if milk is enriched before the pasteurization. The health, sensory and economic aspects should be considered aside from of the manner of the calcium and magnesium salts addition to the milk.

Streszczenie: Rok 2007 był dla branży mleczarskiej bardzo ważny. Od początku roku odnotowano niespotykaną koniunkturę na światowym rynku artykułów mleczarskich. Ceny proszków mlecznych, masła, a pod koniec roku również sera, bardzo szybko poszybowały w górę, aby potem - jak to zwykle bywa - spaść.
Ta wyjątkowa sytuacja na rynku światowym, w połączeniu z ostrą konkurencją na krajowym rynku, poprawiła zdecydowanie rentowność sektora, przyspieszyła proces integracji, ale spowodowała również rozregulowanie rynku mleka.
Polish milk sector situation 2007
Summary: Year 2007 was very important for milk sector. The real boom has been noted on the world market of milk articles as from the beginning of the year. The prices of milk powders, butter, and by the end of the year – also cheeses, have risen very quickly, and then - how it usually happens – fell the same way.
This exceptional situation on the world market, in connection with big competition on national market, from the one side improved the profitability of the sector and accelerated the process of integration, but form the other side caused the big mess on the milk market.
