Prawo żywnościowe w 2014 roku – istotne zmiany
Streszczenie: Celem artykułu jest podsumowanie najistotniejszych zmian w otoczeniu prawnym dla środków spożywczych, w tym mleka i produktów mleczarskich, które miały miejsce w roku 2014. W artykule zostały wskazane regulacje uchwalone w 2014 roku, jak i przepisy, które – choć uchwalone wcześniej – zaczęły (lub zaczną) być stosowane – z uwagi na upływ okresów przejściowych – w 2014 roku.
Food law in 2014 – relevant changes
Abstract: The article aims at summarizing the most relevant legal changes pertaining to foodstuffs, including milk and milk products, which occurred in 2014. The article indicates regulations enacted in 2014 as well as legal provisions, which – despite their earlier enactment – began (or are to begin) to apply due to lapse of transition periods – in 2014.

Analiza skupu mleka w Polsce okresie I-VIII 2014 r. Stopień wykorzystania kwoty mlecznej w roku kwotowym 2013/2014
Streszczenie: Skup mleka w Polsce w 2014 r. dynamicznie rośnie na poziomie ok. 8% miesięcznie. Ceny skupu mleka w 2014 r. były na wysokim poziomie, ale ze względu na pogorszenie sytuacji na światowym rynku mleka, od marca obserwowano spadek dynamiki ich wzrostu w porównaniu rocznym, a od sierpnia spadek ich poziomu rok/rok. Polska przekroczyła w ubiegłym roku kwotowym przyznany limit mleczny i musi w związku z tym zapłacić kary. Poważniejszym problemem jest aktualnie trwający rok kwotowy. W sytuacji, gdy dynamika skupu mleka utrzyma się na dotychczasowym poziomie, wysokość przekroczenia przez Polskę kwoty krajowej dostaw może wynieść ponad 8%, co skutkować będzie koniecznością uiszczenia opłaty wyrównawczej w wysokości znacząco wyższej niż prognozowana opłata za rok kwotowy 2013/2014.
Analysis of milk procurement in Poland during the period January-August 2014. Milk quota utilization in the quota year 2013/2014
Abstract: Milk procurement in Poland in 2014. Is growing dynamically at around 8% per month. Farmgate milk prices in the beginning of 2014 were high, but due to the deterioration in the global milk market, from March decline in their growth has been observed in yearly comparison, and from August decline in their level year/year has been noticed. Last year Poland exceeded quota limit and must therefore pay a levy. A more serious problem is currently ongoing quota year. In a situation where the dynamics of milk collection will remain at the current level, the height of Poland's violation of the national quota deliveries may reach more than 8%, which will result in the need to pay a levy in the amount significantly higher than the projected fee for quota year 2013/2014.

Ciągłe doskonalenie w zarządzaniu jakością i bezpieczeństwem żywności
Streszczenie: Ciągłe doskonalenie stanowi podstawę każdego systemu zarządzania jakością i bezpieczeństwem żywności (SZJiBŻ). W artykule przedstawiono wybrane informacje dotyczące podstaw doskonalenia systemów zarządzania jakością i bezpieczeństwem żywności z uwzględnieniem skutków oraz etapów doskonalenia, a także zaprezentowano fazy dojrzałości systemu (krzywa DLN) oraz podstawowe czynniki warunkujących procesy ciągłego doskonalenia. Opracowanie zawiera także podstawowe informacje dotyczące modeli doskonalenia bazujących na cyklu Deminga (PDCA), takich jak: EPDCA, DMAIC, DMADV, DMEDI oraz DRIVE.
Continuous improvement in food quality and food safety management
Abstract: Continuous improvement is a basic requirement in every food safety and food quality management systems. In article some fundamental information relating to the improvement of the food safety and food quality management systems including effects and stages of the improvement as well as the phases of the system maturity (DLN curve) and some basic factors determining the processes of continuous improvement were described. In the paper some fundamentals on improvement models developed on the Deming`s (PDCA) cycle such as EPDCA, DMAIC, DMADV, DMEDI and DRIVE were presented.

Ayran, Kurut i Torba jogurt – czyli tureckie mleczne produkty fermentowane
Streszczenie: Mleczne produkty fermentowane ze względu na swoje wyjątkowe właściwości, stanowią niezwykle ważne uzupełnienie codziennej diety człowieka, jednocześnie posiadając cechy żywności funkcjonalnej, mającej pozytywny wpływ na organizm człowieka. W artykule omówiono cechy mlecznych produktów fermentowanych oraz scharakteryzowano tureckie przysmaki takie jak ayran, torba jogurt i kurut.

Abstract: Fermented milk products because of the unique properties are extremely important supplement to the daily human diet, having the properties of functional food, with a positive impact on human body. The article discusses the characteristics of fermented milk products and traditional Turkish delights such as ayran, kurut and torba yoghurt.

Streszczenie: W artykule przedstawiono raport zewnętrzny przygotowany dla EFSA dotyczący produktów na bazie mleka typu growing up przeznaczonych dla dzieci w wieku 1-3 lata. Raport obejmuje analizę produktów dostępnych na rynkach europejskich pod kątem składu odżywczego oraz omówienie rynków w tym sektorze z uwzględnieniem udziału największych firm.

Abstract: The article presents an external report prepared for EFSA on milk-based products (growing-up milks) for children aged 1-3 years. The report includes nutritional composition of these products currently available on the market in EU Member States and also the market share of the top players.

Selen – niedoceniany antyoksydant
Streszczenie: Prowadzone na całym świecie badania potwierdzają biologiczne działanie selenu, zarówno w przypadku zwierząt hodowlanych, jak też ludzi. Niedobory selenu skutkują osłabieniem funkcji układu immunologicznego oraz zaburzeniami w działaniu biologicznego układu antyoksydacyjnego organizmu. Ponadto zwiększają ryzyko zachorowalności na choroby sercowo-naczyniowe oraz nowotwory, co potwierdzają liczne opracowania epidemiologiczne.
Selenium – underestimated element
Abstract: Worldwide researches has been confirmed broad biological activity of selenium. Deficiency are associated with increased risk of cardiovascular diseases, weakened of the immune function and disorders of antioxidant system in humans and animals.
