Dodatki do żywności – emulgatory i stabilizatory w produktach mleczarskich

Streszczenie: Żywność jest najważniejszą, podstawową potrzebą życia każdego człowieka, gdyż dostarcza organizmowi energię i składniki odżywcze, niezbędne do wzrostu i prawidłowego rozwoju, zachowania sił witalnych oraz aktywności fizycznej. Wiele produktów spożywczych jest nietrwałych z natury i wymaga ochrony do momentu dotarcia do konsumenta bez wpływu na ich jakość. Można to zrobić poprzez kontrolowane pakowanie albo w warunkach chłodniczych lub poprzez stosowanie różnego rodzaju dodatków do żywności. Emulgatory są obecne w wielu produktach spożywczych, także w produktach mleczarskich, tj. mleko, śmietana, jogurty, serki czy masło. Stanowią je związki chemiczne lub mieszaniny tych związków, które stwarzają warunki na powstanie stabilnej w czasie emulsji. Rolą emulgatora jest wytworzenie trwałych miceli na granicy faz woda-olej (w/o). Na styku faz gromadzą się cząsteczki emulgatora, tworząc kuliste micele. Stabilizatory są stosowane zwyczajowo w celu poprawy zagęszczania, odczucia smakowego, stabilności struktury produktu, zdolności wiązania wody i lepkości. Najpopularniejszymi emulgatorami stosowanymi w systemach mleczarskich są mono- i diglicerydy oraz stabilizatory, takie jak alginiany, karageny, gumy i żelatyna. Zastosowanie stabilizatora do produktów mleczarskich pomaga zmniejszyć zależność od tłuszczów, a tym samym umożliwia opracowanie produktów niskotłuszczowych i niskokalorycznych. Odpowiednia kombinacja emulgatorów i stabilizatorów pomaga wspierać teksturę produktów mleczarskich i zwiększać wrażenia żywieniowe, a producentów wspomaga w zaspokajaniu preferencji konsumentów na atrakcyjne i smaczne produkty mleczarskie.

Food additives – emulsifiers and stabilizers in dairy products
Abstract: Food is the most important basic need of everyone's life, as it provides the body with energy and nutrients necessary for growth and proper development, vitality and physical activity. Many food products are perishable by nature and need to be protected until they reach the consumer without affecting their quality. This can be done through controlled packaging either under refrigeration, or through the use of various types of food additives. Emulsifiers are present in many food products, including dairy products i.e. milk, cream, yogurt, cheese or butter. They are chemical compounds or mixtures of these compounds that create conditions for the formation of a stable emulsion over time. The role of the emulsifier is to form stable micelles at the water-oil (w/o) interface. At the interface of the phases, emulsifier molecules accumulate, forming spherical micelles. Stabilizers are customarily used to improve thickening, taste sensation, product structure stability, water binding capacity and viscosity. The most common emulsifiers used in dairy systems are mono- and diglycerides and stabilizers such as alginates, carrageenans, gums and gelatin. The application of a stabilizer to dairy products helps reduce the reliance on fats, thereby enabling the development of low-fat and low-calorie products. The right combination of emulsifiers and stabilizers helps support the texture of dairy products and enhance the eating experience, and helps manufacturers meet consumer preferences for attractive and tasty dairy products.

Karagen E407 bezpiecznym dodatkiem do żywności 

Streszczenie: Karagen E407 pozyskiwany z wodorostów morskich jest stosowany jako substancja zagęszczająca, żelująca, stabilizująca w wielu branżach przemysłu spożywczego. W artykule przedstawiono charakterystykę karagenu z podaniem jego pochodzenia, właściwości, a także opisano podstawy prawne i przedstawiono najważniejsze aspekty związane z bezpieczeństwem żywności. Opracowanie zawiera najważniejsze informacje dotyczące wyników powtórnej oceny karagenu E407 przeprowadzonej w 2018 r. przez ekspertów EFSA.

Carrageenan E407 is a safe food additive
Abstract: Carrageenan E407 produced from seaweeds is applied as a thickener, gelling agent and stabilizer in many sectors of the food industry. The article presents the characteristics of carrageenan with the indication of its origin and properties, as well as describes the legal basis and presents the most important aspects related to food safety. The paper provides key information on the results of the reassessment of E407 carrageenan carried out in 2018 by EFSA experts.

Dodatki do żywności – znaczenie i bezpieczeństwo stosowania

Streszczenie: Współcześnie w produkcji żywności stosuje się substancje dodatkowe, które podlegają ścisłym kontrolom. Dopuszczenie ich do produkcji żywności jest poprzedzone licznymi badaniami, a na gotowym produkcie są znakowane literą E i numerem identyfikacyjnym. Należy podkreślić fakt, że dodatki do żywności powinny przede wszystkim zwiększać bezpieczeństwo produktów, jak również uatrakcyjniać produkt sensorycznie. Substancjami dodatkowymi, stosowanymi w produkcji żywności są barwniki, substancje konserwujące, przeciwutleniacze, stabilizatory i emulgatory oraz substancje słodzące. Pomimo pozytywnego działania, stosowanie tych substancji może nieść za sobą negatywne skutki, takie jak alergie pokarmowe, zatrucia pokarmowe, zmiany skórne, ale również poważne konsekwencje zdrowotne następujące w wyniku kumulacji w organizmie.

Food additives – the importance and safety of use
Abstract: Nowadays, in food production, food additives are used that are subject to strict controls, their approval for food production is preceded by numerous tests, and on the finished product, they are marked with the letter E and an identification number. It should be emphasized that food additives should, above all, increase the safety of products, as well as make the product more sensory. The additives used in food production are dyes, preservatives, antioxidants, stabilizers, emulsifiers, and sweeteners. Despite the positive effects, the use of these substances may have negative effects, such as food allergies, food poisoning, and skin changes, but also serious health consequences due to accumulation in the body.

Mleko A2A2

Streszczenie: Od pewnego czasu w prasie popularnej, jak i fachowej pojawiają się artkuły i wzmianki o mleku A2. Sprawa jest bardzo interesująca pod każdym względem – naukowym, zdrowotnym i handlowym. Istnieje 13 wariantów genetycznych kazeiny beta: A1, A2, A3, B, C, D, E, F, H1, H2, I, G. Najczęstszymi formami beta-kazeiny u ras krów mlecznych są A1 i A2, podczas gdy B jest mniej powszechne, a A3 i C są bardzo rzadkie. Liczne badania wykonane w wielu krajach dowiodły, że wariant A1 beta-kazeiny wywołuje uwolnienie się podczas trawienia peptydu kazomorfiny-7, która może być czynnikiem zwiększającym dyskomfort trawienia, a także zwiększeniem ryzyka występowania choroby niedokrwiennej serca i cukrzycy. Ponieważ wariant A2 nie jest zdolny do uwalniania w/w kazomorfiny (BCM-7), dlatego uznaje się go za korzystny dla zdrowia. Podejrzewa się, że bydlęca BCM-7 może być czynnikiem ryzyka choroby niedokrwiennej serca u ludzi, miażdżycy tętnic i cukrzycy typu 1. Istnieją również publikacje, których autorzy stwierdzają, że nie ma w pełni udokumentowanych dowodów na prozdrowotne właściwości mleka A2. Jednak, szereg dowodów epidemiologicznych wskazuje, że spożywanie mleka z beta-kazeiną A1 może być czynnikiem ryzyka powiązanym z cukrzycą typu 1, chorobą wieńcową, miażdżycą, zespołem nagłej śmierci niemowląt, autyzmem, schizofrenią itp. Od wielu lat były próby komercjalizacji polimorfizmu beta-kazeiny. Rynek mleka A2 rośnie w szybkim tempie od kilku lat. Wielu konsumentów na całym świecie boryka się bowiem z problemami związanymi z trawieniem mleka, gdyż występują problemy związane z uczuleniem na białko beta-kazeinę A1. Oczekuje się, że światowy rynek mleka A2 wzrośnie z 5,89 mld USD w 2018 r. do 26,9 mld USD do 2030 r., przy CAGR (ang. Compound Annual Growth Rate – pol. skumulowany roczny wskaźnik wzrostu) na poziomie 18,94%, w okresie prognozy lata 2018-2030. W roku 2019, segment supermarketów i hipermarketów dominował jako kanał dystrybucji. Pod względem geograficznym, region Azji i Pacyfiku był wiodącym rynkiem dla mleka A2 w 2019 roku. Można to przypisać rosnącej liczbie firm mleczarskich oferujących zachęty producentom mleka A2 w regionie oraz ogromnej popularności i znacznej konsumpcji napoju mlecznego A2 w regionie. Ponadto w regionie występuje duża dostępność ras krów, które produkują wyłącznie mleko A2. Przewiduje się, że Ameryka Północna będzie miała najszybszy wzrost w latach 2019-2026, przy CAGR 16,9% [30] wynikającym ze znacznego wzrostu popytu i akceptacji napojów mlecznych opartych o mleko A2 będących rezultatem wysokich wydatków konsumenckich, nietolerancji laktozy wśród dużej populacji i rosnącej świadomości zdrowotnej.

A2A2 Milk
Abstract: Articles and mentions of A2 milk have been appearing in the popular and professional press for some time. The case is very interesting in all respects – scientific, health and commercial. There are 13 genetic variants of beta casein: A1, A2, A3, B, C, D, E, F, H1, H2, I, G. The most common forms of beta-casein in dairy breeds are A1 and A2, while B is less common, and A3 and C are very rare. Numerous studies in many countries have shown that the A1 variant beta-casein induces the release of the casomorphine-7 peptide during digestion, which may be a factor in increasing digestive discomfort as well as increasing the risk of coronary heart disease and diabetes. As variant A2 is unable to release the above-mentioned casomorphine (BCM-7), it is considered beneficial for health. Bovine BCM-7 has been suspected to be a risk factor for coronary heart disease in humans, atherosclerosis and type 1 diabetes. There are also publications where the authors stated that there is no fully documented evidence of the health-promoting properties of A2 milk. However, a number of epidemiological evidence indicates that the consumption of A1 beta-casein could be a risk factor associated with type 1 diabetes mellitus, coronary artery disease, atherosclerosis, sudden infant death syndrome, autism, schizophrenia, etc. There have been attempts to commercialize beta-casein polymorphism for many years. The A2 milk market has been growing rapidly for several years. Many consumers around the world struggle with problems related to the digestion of milk, because there are problems associated with allergy to the protein beta-casein A1. World milk market A2 is expected to grow from $ 5.89 billion in 2018 to $ 26.9 billion by 2030, with a CAGR (Annual Cumulative Growth Rate) of 18.94% over the 2018- 2030. In 2019, the supermarket and hypermarket segment dominated as a distribution channel. Geographically, the Asia-Pacific region was the leading market for A2 milk in 2019. This can be attributed to the growing number of dairy companies offering incentives to A2 milk producers in the region and the immense popularity and substantial consumption of the A2 milk drink in the region. In addition, the region has a high availability of breeds of cows that only produce A2 milk. North America is predicted to have the fastest growth in 2019-2026, with a CAGR of 16.9% driven by a significant increase in demand and acceptance of A2 milk-based dairy drinks as a result of high consumer spending, lactose intolerance among large populations and rising awareness health.

Znaczenie mleka i produktów mlecznych w kontekście wybranych chorób – wróg czy sprzymierzeniec?

Streszczenie : „Biała śmierć” czy może „białe zdrowie”? Którym z tych pojęć można zdefiniować mleko i jego przetwory? Są to określenia występujące na co dzień w języku potocznym. Można powiedzieć, że wszystko zaczęło się w poprzednim stuleciu. Między innymi wtedy to, hinduski lekarz Nand Kishore Sharma przekonywał w swej książce „Mleko: cichy morderca”, że mleko może negatywnie wpływać na zdrowie człowieka.
W tym artykule podjęto się odpowiedzi na to nurtujące pytanie. Dokonano tego poprzez analizę wpływu mleka i produktów mlecznych na wybrane jednostki chorobowe. Bez wątpienia mleko i produkty mleczne stanowią ważny składnik diety już od najmłodszych lat. Mleko i produkty mleczne są zalecane również w wieku starczym.

The importance of milk and dairy products in the context of selected diseases – an enemy or an ally?
Abstract: ‘White death' or 'white health'? Which of these terms can be used to define milk and milk products? These are everyday terms in everyday language. You could say that it all started in the previous century. It was then, among other things, that the Indian doctor Nand Kishore Sharma argued in his book 'Milk: A Silent Killer' that milk could have a negative impact on human health.
This article sets out to answer this nagging question. It does so by analysing the effects of milk and milk products on selected disease entities. There is no doubt that milk and dairy products are an important part of the diet from an early age. Milk and dairy products are also recommended in old age.
